Earl Grey Tea Cake w/ Lavender Butter Cream

Ingredients:

Cake-

  • 2-3 earl grey tea bags
  • 1/2 cup hot water
  • 1 cup whole milk
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/2 cup olive oil
  • 1/2 cup infused oil (as above)
  • 2 cups AP flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tbsp vanilla (as always, measure with your heart)

Icing-

  • 1 tbsp lavender
  • 1 tbsp sugar
  • 1/2 cup butter
  • 2 cups powdered sugar
  • 2 tsp vanilla
  • 1 tbsp whole milk
  • 1 tbsp Blueberry juice (for color)

Recipe:

Cake-

  1. Preheat the oven to 350 degrees
  2. I add the earl grey in two ways. First, steep 2 bag in bot water for 5 minutes. Next, warm the milk and add the tea leaves from one bag (make sure its ground). Take off heat and let cool.
  3. In a bowl, sift together flour. Baking soda. baking powder, and a pinch of salt. Set aside
  4. In a large bowl, begin mixing the eggs, olive oil, and sugar together. Add vanilla and earl grey tea water
  5. Slowly incorporate the earl grey infused milk and flour by pouring in a little bit at a time, alternating between the two
  6. Pour batter into a parchment lined baking dish. Bake for about 20 minutes.

Frosting-

  1. Blend or grind the dried lavender and sugar together for about 5 minutes then strain the larger leftover pieces.
  2. add all the ingredients together in a mixing bowl and mix until it forms a silky, smooth emulsion. Slowly add more milk or blueberry juice if needed.
  3. Wait for cake to cool before adding the icing.
