Jackfruit Tacos w/ Quick Pickled Onions + Homemade Flour Tortillas

A simple and delicious meal a vegan and a carnivore can enjoy! The infusion can simply be added to the jackfruit or the tortillas, depending of preference and made as strong as you like!

Cannabis Ingredients:

  • 1 tbsp coconut oil or canna-oil

Ingredients:

Tortillas-

  • 1 1/4 cup all purpose flour, plus more for dusting
  • 1/8 tsp baking powder
  • 1 tsp salt
  • 2 tbsp coconut or vegetable oil
  • 3-4 fl oz of hot water (incorporate slowly)

Jackfruit-

  • 2 tsp chili powder
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 tsp fresh garlic or powder
  • 1 can of jackfruit (in water, drained)
  • 1/4 cup veg stock
  • 1/2 tbsp agave
  • salt
  • pepper

Onions:

  • 1 red onion
  • 1/4 cup balsamic vinegar

Recipe:

Onions-

  1. Simply add the sliced onions and balsamic vinegar in a mason jar and shake! can be used for up to 3 days

Tortillas –

  1. In a large bowl, mix the flour, baking powder, and salt together
  2. Add in the oil and mix until well incorporated. Slowly add in the hot water and mix until the dough is shaggy
  3. On a clean, flour dusted surface knead the dough just until it form a smooth ball. Add more flour if the dough is too sticky. Divide it into four equal sized balls and roll each one out into a thin circle
  4. In a hot, un-greased pan cook each one separately on both sides for about 15-20 seconds. Serve fresh and enjoy!

Jackfruit-

  1. In a seasoned pan, lightly sear the jackfruit on all sides using medium-high heat. Toss in the fresh garlic and spices and continue to cook until aromatic (about 1-2 minutes)
  2. Add in the veg stock, agave and lime juice/zest. Bring everything to a boil, then reduce to a light simmer. Cook until the jackfruit softens and the liquid has reduced to less than half. Feel free to add more veg stock or water if the jackfruit needs to be cooked longer. This takes about 15 minutes
  3. Once the jackfruit is tender pull it apart with 2 folks and cook it in the liquid for a couple more minutes (making sure it doesn’t dry out). Give it a taste and add more spices if needed
  4. Take off heat and serve immediately or store in the fridge for a few days. Enjoy!
