Roasted Tomato Soup w/ Garlic + Gruyere Crostini

From July through October there is always an abundance of tomatoes growing at our locals farms and backyards! Tomatoes are one of the easiest crops to grow and surprisingly similar to the cannabis plant. Although they are not from the same family, they both grow at similar speeds and resemble each other. Some say that growing tomatoes can help you better understand cannabis plants since they require similar care. They can also be great companion plants for sativa varieties but its important to space them out enough so they don’t have to compete for sun.

The best time to eat tomatoes is in the late summer-early fall but canned and greenhouse grown tomatoes can be enjoyed year round! Tomato soup is a classic comfort food that I love to enjoy all year with something cheesy! The Crostini adds a beautiful crunch to this meal that softens when dunked into this savory soup without every getting soggy. I sometimes like to put a piece in the middle of the soup topped with some fresh garden herbs as another mouthwatering alternative to dunking.

Ingredients:

Soup-

  • 2 lb fresh tomatoes, quartered
  • 1 sweet onion, quartered
  • 5-7 garlic cloves (or preference)
  • 1/2 tbsp red wine or balsamic vinegar
  • 1 cup vegetable broth or (broth of choice)
  • handful fresh basil leaves, minced
  • .5 tsp paprika
  • .5 tsp turmeric
  • splash of milk (optional)
  • coconut cream, for garnish (optional)
  • salt + pepper, to taste
  • olive oil, as needed

Crostini-

  • Italian or French bread, sliced on a bias
  • 1 tbsp olive oil
  • 2-3 garlic cloves, peeled
  • 1- 2 cups grated Gruyere cheese or any cheese of choice

Recipe:

Tomato Soup-

  1. Preheat the oven to 375
  2. Lay tomatoes (insides facing up), garlic cloves, and onion out evenly on a parchment lined baking tray
  3. Drizzle olive oil and sprinkle some salt and pepper over veg
  4. Roast in the oven for around 30 minutes, or until lightly charred and juicy
  5. First, place the onion in a large pot on low heat to caramelize for another 10 minutes or so
  6. Deglaze the pan with some red wine or balsamic vinegar before adding in the rest of the veg (including the juices)
  7. Add the stock, basil, and spices. Simmer for about 30 minutes, adding the cream and butter halfway through. *This is a good time to start the bread
  8. Plate and make an eye-catching design on top with a small amount of coconut cream for garnish. Fresh herbs optional. Could also be finished with Infused Balsamic Reduction

Crostini-

  1. Preheat oven to 375
  2. Brush olive oil on bread slices and toast one side for 4-6 minutes, until golden brown
  3. Let cool for a few minutes before rubbing garlic on both sides, flipping, and adding shredded cheese
