One of my favorite ways to use what needs to be made in the fridge or garden! This baked tofu is my favorite way prepare it for things like stir-fry, ramen, or noodle dishes.
Cannabis Ingredients:
- Canna-oil or coconut oil
Optional sugar, maple syrup/agave, or more oil/coconut oil
Ingredients:
Baked Tofu –
- 12oz tofu, extra-firm, cubed
- 2fl oz tamari or low-sodium soy sauce
- 1/2 fl oz maple syrup or agave (infusion optional)
- 1 1/2 fl oz rice vinegar
- 1 tsp ginger, minced
- 1/2 tsp red chili flakes
- 1/4 cornstarch
Stir-Fry-
- Oil of choice (canna-oil)
- 1 tsp garlic, minced
- 1 tsp ginger, minced
- 1/2 oz scallions, thin slice
- 1 cup shiitake mushrooms, sliced
- 1 cup carrots, julienne
- 1 cup bell pepper, julienne
- 1 cup broccoli florets
- 1/2 cup snow peas
- 3 fl oz veg stock
- 1 1/2 fl oz tamari or soy sauce
- 1/2 oz ginger, minced
- 1/4 oz garlic, minced
- 1 fl oz rice vinegar
- 1 tsp cornstarch or arrowroot powder
- Sesame seeds
- Cooked rice
Recipe:
Baked Tofu-
- Combine all the ingredients (except the cornstarch) and marinate the tofu for at least 30 minutes before using
- Preheat the oven to 350 degrees
- After at least 30 minutes drain the tofu from the marinade and lightly coat each piece in a thin layer of cornstarch before placing on a lined baking sheet
- Roast for 25-35 minutes while making the stir fry & the rice
Stir Fry-
- Prepare the mise en place so everything is ready to go for fast cooking
- In a large skillet or wok, begin heating the canna-oil slightly over medium-high heat. Add the garlic and ginger and cook just until aromatic (1-2 minutes)
- Add the mushrooms and carrots. Cook for a few minutes until they start to soften then add the peppers, broccoli and snow peas. Add in small amounts of veg stock to allow the vegetables to get tender without burning
- Whisk together the vegetable stock, tamari, ginger, garlic, vinegar and cornstarch together. You can also add more oil, coconut oil, sugar, or maple syrup/agave to add to the infusion
- Add this slurry to the vegetables and allow to thicken for a few minutes before serving with rice, baked tofu, and sesame seeds
