There is nothing I love more than succulent roasted beets and the combination of goat cheese, honey and mint always leaves your mouth watering for more. Although this recipe requires some knife skills, the overall prep is relatively simple and only requires a few steps. This sweet and savory CBD or CBG infused dish is perfect to start a coursed out meal or as a welcoming appetizer for party guests.
Strain Pairing: Since we’re whipping an infused honey into the goat cheese, this recipe isn’t going to be THC heavy. I like to use CBD strains for their subtle pain-reliving effects. Both beets and CBD have anti-inflammatory and anti-oxidant benefits (like honey) and even have been shown to slow down the progression of different types of cancer. Something like Suver Haze is a high CBD strain that’ll you get the most out of your infusion.

- 2 Tablespoons Infused Honey
Ingredients:
- 3 large beets
- 1 tbsp olive oil
- 1/2 tbsp cumin seeds
- 1/2 cup goat cheese
- 2 tbsp infused honey
- Mint for garnish
- Pistachio or walnuts for garnish
- Salt to taste
- Pepper to taste
Recipe:
- Preheat the oven to 350 degrees
- Toss clean beets with some olive oil, salt, pepper, and cumin seeds and wrap each individually or in like-size pairs in tin foil. Save beet greens for plating (optional)
- Bake in the oven for 45 minutes to an hour, until fork tender
- Let cool for a bit before peeling the skin off the beets
- Cut the beet into a block, then into even, bite slices slices
- Whip the goat cheese and honey and any herbs of choice by hand or powered mixer
- Using a spoon or piping bag, add a dollop of whipped goat cheese to each beet slice, leaving top pieces bare
- Stack into 3 tiers and garnish with crushed pistachio and fresh mint
